Nine hawker or ‘street food’ stalls have been newly included in the Michelin Guide Singapore 2024, highlighting the variety and richness of Singapore’s food scene.

These stalls, known for their distinctive dishes, span from Maxwell Food Centre to Amoy Street Food Centre, though it seems that the inspectors just discovered Clementi 448 Food Centre.

Note that their official rankings are not confirmed yet.

The Michelin Guide will announce potential Bib Gourmand rankings for these stalls on 18 June 2024, which recognise eateries offering quality food at a good value.

At Han Kee Fish Soup located in Amoy Street Food Centre, the buzz and the queue are testament to its popularity, especially among those who crave its renowned fish soup.

I have seen customers in the line an hour before opening horus.

Known for its generous servings of thick-cut Batang fish (Spanish Mackerel) in a light, savoury-sweet broth, this stall has garnered a loyal following.

The clear broth, praised for its rich flavours without the heaviness of milk, is a highlight, offering a refreshing alternative to the richer, milky fish soups available elsewhere.

I must say the atmosphere of the queue and the interaction with the stall’s operators are part of the ‘adventure’. Patrons should be prepared for a strict ordering process, where changes or last-minute additions are discouraged, and requests for extra condiments might not be warmly received.

Despite these quirks, many find the quality of the soup worth the wait and the strict service protocol. For those planning a visit, it is advisable to arrive early or after the peak lunch rush to avoid the longest waits.

Oh, another Fish Soup stall? Jin Hua Fish Head Bee Hoon is found at Old Airport Road Food Centre and Maxwell Food Centre.

It offers a variety of fish soup options, including sliced fish, fried fish meat, and fried fish head, with customisable choices like adding milk to the soup for extra richness.

The preparation of the soup is detailed and methodical, handled by a dedicated hawker, which sometimes leads to longer wait times.

However, the effort is evident in the quality of the dish, characterized by its hot, milky, and flavourful broth made without MSG, using natural ingredients like grouper broth, old mother hens, yellow beans, fish bones, ginger, and shrimp paste.

This concoction results in a Cantonese-style soup that is rich and robust, different from the clearer Teochew-style soup.

I found generous portions of fish, vegetables, tofu, and tomatoes. The thick bee hoon noodles complement the creamy broth well. No wonder the queue is so long.

Delhi Lahori, located in Tekka Food Centre, offers a genuine slice of Pakistani and Indian cuisine.

This unassuming stall serves up a mix of Delhi and Lahore flavours.

The menu is robust, featuring bold and spicy dishes like Butter Chicken Naan, Keema Chapati, and more, all priced around $6, providing good value in Singapore’s costly culinary landscape.

The stall maintains traditional cooking methods, with each naan hand-slapped and baked to perfection in a tandoor.

The Garlic Naan, a customer favourite, is especially noted for its large size and the delightful caramelisation of garlic during baking, which infuses the bread with a deep, aromatic flavour.

This is a re-entry into the Guide. Founded in 1971 as a hawker stall at the now-defunct Margaret Drive Food Centre, it is a family business owned by a Mr. Leong. This stall is operated by one of his sons Benson.

The flagship item Chicken Rice is the most popular in the menu line-up.

Sin Kee’s chicken are poached in a flavourful stock using chicken bones and other seasonings, to produce chicken that’s tender, smooth-skinned, succulent, and evenly cooked through.

An interesting method is that the chicken is plunged in icy water to “shock” the poultry. This cooking method results in a meat that is ‘crunchier’ and in a skin that is smoother.

What makes diners constantly coming back for more is essentially their signature dish Chicken Rice, all chunky slices of chicken meat served with a plate of flavourful yet surprisingly, not as oily rice.

Chef Kang’s Noodle House located at Jackson Square is not the most convenient place to find food.

This is a re-entry into the Michelin Guide, as it was previously awarded with a Bib Gourmand.

The noodle house has become popular due to Chef Kang with his Michelin star status, though the line has subsided after the initial hype.

Chef Kang’s Noodle House serves up 3 items – Noodle with Char Siew and Wanton, Noodle with Shredded Abalone, Char Siew, and Wanton, and Pork Belly Char Siew.

I personally found many components working well together – the thin, springy noodles coated in a flavourful, rich sauce accompanies with pieces of crispy lard (yums).

The wantons even had shrimps in them; and the cloudy soup was not the “MSG-flavoured” type and tasty.

The tender Char Siew itself had that delicious caramelised-sweetness, not the shrivelled, thinly-cut ones.

Song Fish Soup at Clementi 448 Market & Food Centre has a pretty long queue, and recently included into the Michelin guide.

You can find Fish Head Bee Hoon ($6, $8), Sliced Fish Bee Hoon ($5, $7), Fried Fish Bee Hoon ($5, $7), Yuan Yang Bee Hoon ($6, $8), Tom Yam Soup ($6, $8), and Lala Sliced Fish Soup ($7, $9).

This stall, famed for its rich and creamy broth, delivers a comforting blend of fresh fish slices and fried fish, offering both sliced and fried varieties in dishes like the popular Yuan Yang Fish Soup.

The fried fish receives mixed reviews though with some finding it a bit ordinary, or not crispy enough.

Customers can enhance their meal with add-ons like a deep-fried egg, which contributes an extra layer of flavour to the already robust soup.

Zheng Zhi Wen Ji Pig’s Organ Soup, found at Clementi 448 Market & Food Centre, has carved out a niche for itself with a Michelin mention.

Do not confuse this stall with the other more famous shops with similar names.

The stall, celebrated for its hearty and aromatic soup, offers a variety of pork-based dishes like Bak Kut Teh and Braised Pig’s Trotter, but it is the Pig’s Organ Soup that draws the customers.

The soup is known for its clear, light broth enriched with offal, delivering a subtle complexity that is enhanced by tofu and salted vegetables. I did find the soup slightly on the plain side.

There is mixed consistency in the quality of the pork ingredients, with the pork slices a bit tough but at least the intestines are soft and without a strong stench.

Happy to know that the stall has finally gotten some recognition with a NEW Michelin Guide entry.

The three signature items are Penang Prawn Noodle Soup, Penang Fried Kway Teow, and Penang Assam Laksa, with each bowl starting from an affordable $4.

The broth of Assam Laksa ($4, $5) was rich with bright citrusy notes and a sweet-and-spicy finish. While some versions can be one-dimensional in taste, this one had a layered tangy spiciness.

As for Jason’s version, Penang Prawn Noodle Soup ($4, $5) was flavourful without being overly salty, though slightly sweet. Mix in some of the chilli paste for some punch.

I thought Penang Fried Kway Teow ($4, $5, $6) had some smokiness and wok-hei, but it seemed to be lacking in flavours and distinctiveness of Penang’s usual versions.

Jason Penang Cuisine has been around for so many years with Penang dishes that are quite authentic-tasting and comforting. An affordable Michelin-recommended option.

Maxwell Fuzhou Oyster Cake

Established in 1962 by Madam Pang Siew Ting, the family-run business serving this just one item has also been recently included in the Michelin Guide Singapore.

The Fuzhou Oyster Cake ($2.50 each) consists of a rice-based fried batter encompassing moist minced meat, chopped oysters, crunchy peanuts, and coriander.

Looking like a small ‘UFO’, the snack is typically fried in small batches to ensure freshness, resulting in both chewy and crispy textures.

The treasure comes when you take your first bite, revealing a soft, savoury inside of oysters and minced pork.

I did find this quite oily, and the outer layer too dark brown. If it is less oily, I would take two at a go.
