When talking about milky Fried Fish Soup, Jin Hua Fish Head Bee Hoon 金華魚頭米粉 at Maxwell Food Centre would certainly come in as a firm favourite.

There is actually a branch outlet at Old Airport Road Food Centre.

Although both locations are popular and crowd-drawing, it is the Old Airport Road branch that caught the eye of Michelin inspectors, securing a place on their coveted list.

I previously mentioned that the Michelin inspectors in Singapore, seem to have a specific liking for Fish Soup in recent years.

You can find a high proportion of Fish Soup hawker stalls listed, including Jun Yuan House Of Fish, Kwang Kee Teochew Fish Porridge, Beach Road Fish Head Bee Hoon, Ron Sheng Fish Head Bee Hoon, Tai Seng Fish Soup 泰成魚湯, and Song Fish Soup 宋鱼汤. (You really like Fish Soup, yah?)

My experience at the Old Airport Road outlet mirrored the familiar scene of the original—long queues and a palpable anticipation in the air.

Here, the menu remains straightforward yet appealing.

Diners can choose toppings of sliced fish, fried fish meat, or the more indulgent fried fish head.

The fish soup at Jin Hua can be enjoyed with different variations of fish, including sliced, fried, and the titular fish head, with options to pair with thick bee hoon, rice, or porridge.

You also have the option to include or exclude milk. I would say get the milk version if you can.

The preparation here is an exhibition of patience and precision. The stall operates manned by a single hawker when I visited, with just two stoves, which means that wait times can be substantial.

However, look at each bowl – it arrives steaming hot (hotter than the average around).

The soup is notable for its absence of MSG, relying instead on the natural flavours of grouper broth with a splash of milk for added richness.

This Cantonese style of soup is different from the usual Teochew style, which has a cleaner-tasting and clearer soup.

The broth here is prepared using old mother hens, yellow beans, fish bones, and a mix of aromatic ingredients like ginger and shrimp paste. This offers a depth of flavour that is both robust and satisfying.

The thick slices of fish, while hearty and substantial, lacked a bit of the fish’s natural sweetness, though this was compensated for by the generous helpings of vegetables, tofu, and tomatoes that accompanied the soup.

The bee hoon, thick and smoothly textured, absorbed the creamy broth wonderfully.
