The Michelin inspectors in Singapore seem to have a certain fondness of Fish Soup in these couple of years.
Recent additions include Jun Yuan House Of Fish, Kwang Kee Teochew Fish Porridge, Beach Road Fish Head Bee Hoon, Ron Sheng Fish Head Bee Hoon and Tai Seng Fish Soup 泰成魚湯 (Taman Jurong).
This seems to be a higher proportion, as compared to some of the other local hawker delights.
And there are two new ones added in 2024 itself – Song Fish Soup at Clementi 448 with a Bib Gourmand/a>, and Jin Hua Fish Head Bee Hoon at Old Airport (with a Michelin Selected).
Singaporeans may be perplexed as some are not considered the top-tier ones when it comes to Fish Soup (no offence to any stalls).
Song Fish Soup 宋鱼汤 is found at Clementi 448 Market & Food Centre and usually attracts a queue.
Right in the same food centre, you would find a couple of Fish Soup stalls, though Song’s seems slightly longer.
There is a loyal following of patrons who often do not mind the wait for a bowl of their comforting fish soup.
On its menu are Fish Head Bee Hoon ($6, $8), Sliced Fish Bee Hoon ($5, $7), Fried Fish Bee Hoon ($5, $7), Yuan Yang Bee Hoon ($6, $8), Tom Yam Soup ($6, $8), and Lala Sliced Fish Soup ($7, $9).
The Yuan Yang Fish Soup ($6, $8) contained both sliced and deep-fried fish.
While the fish was considered fresh, the fried battered fish could have been thicker, and also not overly crispy.
I enjoyed the bitter gourd, tofu and tomatoes, but the soup itself – neither too clear nor milky, could do with more flavours.
Add some of the red cut chillies within, or give a dip of the chilli sauce which I found quite tasty.
Customers have the option to enrich their meal further with additions like deep-fried egg and fish maw.
I also had the Seafood Soup ($6).
While the prawns and the thinner slices of batang fish were fresh, the soup was somehow on the bland side and lacked that seafood sweetness.
But I liked that there were other components like lala, bitter gourd, cabbage, and fried shallots – good value for its price.
