The well-loved Numb 川麻记 has opened a brand-new outlet at One Raffles Quay.
This new outpost continues the tradition established by its Marina One outlet, serving up Sichuan flavours with a contemporary twist.
Other than the classic favourites, what I really enjoyed is the new claypot series.
It includes mouth-watering Chongqing Chicken Pot, Sichuan-Style Beef with Potatoes, Claypot Fish and Tofu Stew, and Herbal Chicken Soup with Ginkgo Nuts.
The individual pots are perfect for a quick yet satisfying meal, making them an ideal choice for busy professionals in the CBD.
Also, the claypot helps ensure the ingredients cook evenly, enhancing the texture and flavour of the dish. And so, so comforting.

Fragrant Sesame Oil Chicken Claypot 砂锅麻油鸡 ($19.80)
A comforting dish that features tender pieces of chicken simmered in a blend of sesame oil, ginger, and soy sauce.
The aroma of sesame oil hit me even before the dish reached the table, immediately drawing me in.
The chicken stays juicy, with the savoury depth of the special sauce tying everything together.
It reminded me of home-style cooking in a good way, yet rich and flavourful.
(And oh, I wanted to order the Ji Gong Bao but it was sold out, so next time I must try this.)
Sichuan-Style Beef Claypot with Potato 砂锅川味土豆焗牛肉 ($23.80)
Tender chunks of beef and soft potatoes are slow-cooked together in a claypot, creating a cohesive stew.
The beef is cooked just right, absorbing the robust, slightly spicy flavours of the sauce.
The Sichuan spices add just a gentle heat that is present without overpowering, making it approachable even for those less accustomed to spicy dishes.
Claypot Fish and Tofu Stew 砂锅鱼块豆腐煲 ($22.80)
The fresh fish and soft tofu create a wonderfully delicate texture that melts in the mouth.
But what makes this special is the addition of pickled mustard greens (酸菜) which brings a tangy, slightly sour note that cuts through the richness of the broth.
Simple, hearty, and full of flavour.
Garlic Prawn on Vermicelli Noodles Claypot 砂锅蒜蓉粉丝虾 ($23.80)
One of my new favourites. Served in a claypot, this dish combines plump, juicy prawns with a bed of silky vermicelli noodles that have soaked up the bold, garlicky sauce.
My favourite part is the soft vermicelli noodles that capture every bit of the savoury juices.
If you love garlic, the flavours here won’t disappoint.
Spicy Marbled Wagyu Cubes 香辣雪花和牛粒 ($49.80)
The wagyu cubes are seared to a light crisp, allowing the marbling to deliver a buttery, melt-in-the-mouth texture.
Each bite bursts with the flavours of the beef, heightened by the fiery kick of red and green chillies and the signature numbing sensation of Sichuan peppercorns.
This is quite addictive, and I found myself reaching for piece after piece.. Also, the presentation makes it appealing to the eyes as it is to the palate.
Stir-Fried Tomato Egg 经典番茄炒蛋 ($16.80)
This dish combines wok-fried scrambled eggs with juicy tomatoes. It looks simple, but the eggs were cooked beautifully, light and fluffy with just the right texture.
With every bite, I was reminded of home-style meals I grew up with – unpretentious, hearty, and filled with warmth.
Stir-fried Jack Beans with Red Chillis and Sichuan Pickles 干煸 四季豆 ($19.80)
A vibrant dish that packs a punch of bold flavours. The jack beans are expertly stir-fried, achieving a slightly crisp yet tender texture that holds its own against the robust seasoning.
Crispy Eggplant Fries 风味脆皮茄子 ($15.80)
Another must-order, this are not your ordinary ‘fries’. It features deep-fried eggplant slices with a golden, crispy exterior and a soft, creamy interior.
The batter, lightly spiced with Sichuan flavours, offers a gentle heat balanced by an addictively slight sweetness.
