[BUSAN] Your quest for authentic Pyongyang naengmyeon (cold buckwheat noodles) in Busan stops here at Buda Myeonoak 부다면옥.
From Banyeodong, it relocated in 2021 to Haeundae District near Haeundae Beach.
The restaurant is found on the second floor, and you can access it through the stairs next to a pharmacy.
This move opened the door to more people discovering this Korean noodle.
Locals and tourists (hello beachgoers) alike started experiencing traditional Korean noodles, Pyongyang-style, in the heart of Busan.
What’s unique about Buda Myeonoak is they offer noodles made with 100% buckwheat flour.
This ‘formula’ gives the noodles its characteristic texture and taste profile. I found these pure buckwheat noodles to be quite robust and have a certain nutty flavour.
Try their Mul-Naengmyeon (12,000 Won) or water-based buckwheat noodles.
This is as authentic as you can get to traditional Pyongyang naengmyeon taste.
The refreshing broth was mild yet earthy. They make it by combining vegetable stock with Korean beef.
You can tell from its clarity it has been prepared well while allowing the flavours to meld as one. Feel free to garnish it with winter cabbage, sweet and sour radish, or cucumbers for some crunch.
Since I enjoy some heat in my dish, I actually much preferred the spicy Bibim Naengmyeon (12,000 Won). It is a cold noodle dish served in a gochujang-based sauce.
The Korean red chili pepper paste added a distinctly tangy kind of spiciness and slight sweetness, which I liked.
I have tried a couple of famous Bibim Naengmyeon in South Korea, and this probably ranks as my favourite.
Paired with a boiled egg, or “suyuk” (boiled meat) for some heft to the meal.
Menu is limited to only a few items. Aside from Naengmyeon, they have Korean Beef Stew (20,000 Won) and Korean Beef Tail Stew (100,000 Won for a full meal).
Whether you have never tasted Pyongyang Naengmyeon in your life or you have always fancied buckwheat noodles, Buda Myeonoak 부다면옥 is a must-visit eatery in Busan.
