The addition of two pieces of grilled cha shu, fish powder and pork fat takes the flavour profile up a notch, making it intense yet comforting.

And yes, you can also expect a generous serving of bean sprouts, which add a fresh crunch that cuts through the heaviness.

There’s also a spicy option available. Note that the Jiro bowls requires a short wait of around 10 minutes for preparation.

The name “Kashiwa” refers to chicken in the Kansai dialect, and this dish reflects a distinctly Japanese way of handling flavours.

This is the clear crowd favourite for a good reason. The udon noodles, which are freshly prepared each day, are served in a bonito-based soup stock that’s light yet full of depth.

My favourite part is the tender beef slices which add a gentle sweetness, while the onsen egg brings an extra layer of richness when mixed into the broth.

This bowl feels comforting, making it an easy choice for both first-timers and regulars.

Spicy Yakiniku Tonkotsu Udon from Tamoya Udon & Tempura at Suntec City

For those looking for something with a bit of heat, this udon combines the creaminess of tonkotsu broth with tender, spicy beef yakiniku.

The broth is flavourful and thick, while the beef yakiniku brings a touch of heat that elevates the entire experience.

I thought the spiciness was well-calibrated, adding just enough warmth without overwhelming the tonkotsu’s creamy base.

If you prefer dry udon, this bowl is topped with spicy cod roe, mayonnaise, and an onsen egg.

The dry-style udon has a slightly firmer texture, and lets the flavours of the toppings shine.

The grilled beef is tender and slightly smoky, while the spicy cod roe and mayonnaise mix which is aburi (torched) before serving add a creamy flavour with a hint of spice.

When mixed with the onsen egg, the toppings create a silky coating for the udon – chewy with that satisfying mouthfeel.

This bowl features Tamoya’s signature udon served in a creamy tonkotsu broth enhanced with house-made black garlic oil (ma-yu).
