Fiamma, one of the dining concepts on Sentosa Island, is Michelin-starred Italian-Argentine chef Mauro Colagreco’s first restaurant in Singapore.
Chef Mauro Colagreco is behind three-Michelin stars restaurant Mirazur in Menton, France.
At the heart of Fiamma (Italian for “flame”) is the heritage and spirit of Italian family cuisine.
After all, Chef Mauro’s childhood memories and his grandmother’s cooking are inspirations for his menu.
You can expect a repertoire of traditional Italian classics with a twist, in an upscale yet charming home-like setting.
Step in and you will see the main dining room designed like a cosy living room.
There is an open kitchen plus a wood-fired oven, adding the warmth and feel of an Italian farmhouse.
They even have a terrace overlooking the pool and garden.
What’s good to eat?
For antipasti, I was recommended the Crema Di Castagne ($40).
You will savour the richness of the chestnut soup (without being too heavy), beautifully balanced with the sweetness of pumpkin tortellini.
No regrets for ordering the Polpette ($30) as well, probably my favourite dish of the entire meal (yeah, not the pizza or pasta but this).
A classic with a twist, the traditional pork and veal meatballs were succulent and rich.
Its basil-ginger tomato sauce provided a creamy-meets-tangy base that elevated the dish from familiar comfort food to an exciting flavour adventure.
I guess you cannot come to Fiamma without having their Pizzas.
Its homemade pizza dough is kneaded by hand, rested, fermented, topped with fresh ingredients, then cooked in the wood-fired oven.
Some recommendations included the Tartufo ($46) topped with Tuscan salami, smoked Scamorza cheese cream, and black truffle.
The Carpricio Pizza ($38) had addition of smoked mushroom, Neapolitan sausage, Salina caper, and basil – be transported straight to the heart of Naples with its thin smoky crust.
Pair the pizzas with your choice of pasta – they have regular and handmade ones.
The Trofie Al Pesto ($36) used fun twisted pasta with garlic cream, calamari, basil, olive, and sun-dried tomato.
I went for the indulgent choice of the chef-recommended Tagliatelle All’astice ($58) – handmade pasta with lobster, tarragon, and confit tomato.
What was nice (and luxurious) was that they didn’t skimp on the lobster here.
You get a generous amount of those succulent blue lobsters, yum!
Come dolce time, there is Fiamma’s rendition on the classic Tiramisu ($22) with mascarpone cheese cream, savoiardi biscuit, espresso, and Amaretto liqueur.
The experience at Fiamma is like having a relaxed meal at your friend’s house, who just happens to be a top-notch culinary team.
