There are currently several “Sin Kee” Chicken Rice stalls in Singapore, sometimes known as the “Margaret Drive” Chicken Rice.
The most famous currently should be Margaret Drive Sin Kee Chicken Rice, found at 40 Holland Drive.
A bit of history: Established in 1971, Sin Kee Chicken Rice began as a humble hawker stall at the former Margaret Drive Food Centre, owned by Mr. Leong Fook Wing.
After his passing in 2008, his two sons, Niven and Benson, inherited the family business.
Niven eventually sold the original chicken rice recipe and now runs Sin Kee Chicken Rice (Margaret Drive) at 152 Ubi Ave 4, Recess Time @ Ubi.
Benson managed the original Sin Kee stall until it ceased operations at Mei Ling Food Centre in 2015.
In 2016, together with his business partner Edwin Goh, Benson relaunched Margaret Drive Sin Kee Chicken Rice at Holland Drive, situated at Chang Chen Mee Wah Coffee Shop.
Benson’s Margaret Drive Sin Kee Chicken Rice had been recognised with a Michelin Bib Gourmand.
The centerpiece of Sin Kee’s menu is undoubtedly their Chicken Rice ($4.50, $5.50).
It is renowned for its succulent slices of chicken served alongside rice that is flavorful yet not overly oily.
Sin Kee prepares their chicken using a meticulous method where the meat is poached in a rich, aromatic stock created from chicken bones and various seasonings.
This process ensures the chicken is tender and well-cooked, with a smooth and appealing skin.
An additional unique step in their preparation involves immersing the freshly poached chicken in icy water.
This “shocking” technique enhances the texture of the meat, making it slightly ‘crunchier’, and smooths the skin while forming a gelatinous layer underneath that is particularly tasty.
In line with Sin Kee’s traditional approach, no soup is served with the Chicken Rice. Instead, the rich broth used during poaching is incorporated into cooking the rice, infusing it with deeper flavours.
Sin Kee serves condiments on the side: soy sauce, chili sauce, and its Cantonese-style ginger dip – which makes the chicken meat refreshingly better.
The ginger dip uses both young and old ginger, house-made grated and prepared watery with a gentle spiciness.
The chilli sauce, made with lime and vinegar, is sharp, tangy, and spicy.
While the Chicken Rice itself receives consistent praise, the side dishes like the oyster sauce greens and bean sprouts are also recommended for a complete meal.
For those planning a visit, it is advisable to arrive early. The stall tends to sell out quickly before its closing time.
