Bulgogi Syo has officially opened its fourth outlet in Singapore, introducing its unique Korean hotstone specialities to Suntec City.
You will find the restaurant in the basement near the fountain area, directly opposite POCHA! Korean Street Dining.
With outlets at Bugis Junction, The Woodleigh Mall, and VivoCity, also lookout a new opening at Tampines Mall next month.
Known for its theatrical three-step Hot Stone Grilling process – Sear, Torch, and Flambé – Bulgogi Syo combines cooking with showmanship.
It creates an immersive dining experience that combines performance and flavour in equal measure.
One of the most exciting offerings at Bulgogi Syo’s new Suntec outlet is an exclusive range of smoked meats.
This outlet uses a custom smoking chamber to add a deep, rich flavour to hotplate dishes like Angus Beef Ribeye, Duroc Pork Belly, and Hangari Dakgalbi.
Also, check out Bulgogi Syo’s take on Sotbap, a traditional Korean rice dish served in a pot, available for a limited period of time.
This comforting classic is taken to another level, crafted with special induction pressure technology, which ensures fluffy, well-cooked rice with every order.
This process enhances the texture of the rice, making it both soft and slightly sticky while locking in the subtle nutty flavour.
From smoked meats to Sotbap, here’s a look at Bulgogi Syo’s signature dishes at Suntec City:
Smoked Duroc Pork Belly ($21.90)
The Smoked Duroc Pork Belly is a must-try, especially if you’re a fan of pork done right.
Known for its beautiful marbling, the pork belly is first smoked to deepen its flavour and then finished with Bulgogi Syo’s signature 3-step process: Sear, Torch, and Flambé.
Look out for it to be flambéed tableside, which gives the pork belly a distinctive, smoky aroma and slightly charred exterior.
I found the result both satisfying and indulgent, with a crisp, charred exterior releasing a subtle smoky aroma, while the interior melts in the mouth.
You can choose between a refreshing apple hangari sauce or a bold, spicy jeyuk sauce.
The apple hangari sauce brings a slight sweetness, while the spicy jeyuk sauce adds a bolder, slight fiery element for those who enjoy a kick.
LA Galbi ($39.90)
The LA Galbi, featuring USDA Choice Grade Beef Short-ribs, is one of my favourites.
The ribs are marinated overnight, resulting in more tender meat with an appetising hint of sweetness.
Cut across the bones, the short ribs have just the right amount of chew and a rich, savoury taste.
Smoked Scallop Mentai-Mayo Sotbap ($21.90, available for limited period)
This pot-rice comes topped with tender, smoked scallops dressed in a creamy, slightly spicy mentaiko mayo sauce.
Paired with white kimchi and spring onions, this dish delivers a good mix of textures and tastes, from the smoothness of the scallops to the subtle crunch of the fresh vegetables.
As you reach the bottom of the pot, you’ll find nurungji, the crispy scorched rice left behind.
Pouring hot barley tea over this layer creates a warm, porridge-like consistency, adding a toasty flavour to the last bites.
It is the kind of ending to a meal that feels homely.
Smoked Hangari Chicken Sotbap ($16.90, available for limited period)
Not just the usual chicken, as the meat is slow-smoked for a deeper flavour.
The Sotbap is also served with kimchi radish, spring onions, and a drizzle of pajuri sauce, a tangy, spicy green onion and sesame-based dressing.
The chicken itself is tender with a smoky depth that pairs with the slight acidity of the kimchi and the freshness of the spring onions.
I like how the pajuri sauce adds an extra layer of brightness with a hint of zest.
Tteokbokki with Kimari ($15.90 without cheese, $18.90 with cheese)
For a casual, comforting sharing dish, the Tteokbokki with Kimari is a fantastic choice.
The chewy rice cakes and fish cakes are generously coated in a spicy-sweet gochujang sauce, giving that satisfying kick typical of Korean street food.
The kimari is a crispy seaweed-wrapped glass noodle addition, which is quite addictive and balances the soft, spicy rice cakes.
I added the torched mozzarella cheese, which added a bit of creamy richness.
Bacon Kongnamul Pancake ($17.90)
Made with crispy bacon and fresh beansprouts, the pancake has a crunchy outer layer, with a soft, fluffy interior – contrasted with the usual crispy and thin type.
The spicy dipping sauce adds a tangy contrast that I found really elevated each bite.
Seafood Sundubu Jjigae ($18.90)
Seafood Sundubu Jjigae, a spicy soft tofu stew, is my pick for anyone in need of a warming, hearty meal.
Brimming with tiger prawns, clams, mussels, and squid, this stew has a comforting warmth, with silky soft tofu soaking up the flavourful broth.
Makkoli / Soju Tower ($39.90)
The Makkoli Tower adds a fun and refreshing note to the meal. With options like Lychee, Blue Hawaii, Green Apple, and Strawberry, the presentation is as eye-catching as it is refreshing.
The gentle fizz and fruity sweetness of the Makkoli make it an ideal pairing for the hearty, smoky dishes on the menu.
